I remember years ago when I was the night manager at Cafe Casino in Scottsdale AZ.I hired a new baker and told him to make a bun dough for me.He responded by saying where is the mix.Every one in the bakery stated laughing.A mix for bun dough why the hell would anyone baker use a mix for bun dough one of the first doughs you learn when you become a baker.That was 20 years ago. Now I'm 45 and there's not even one high volume all scratch bakery in town.I spent my hole life learning the bakery trade a trade that will soon disappear |
