Starting from your left,the salad fork is the first fork, followed by the entree fork.

A lot also depends on where you are in the world and WHO you work for. For instance, Fairmont Hotels serve from the right. It's one of their service standards.

This a service standard. Each place has a standard of service.

The salad fork (almost always) is the first fork to your left. Some hotels do not use a different size fork for salad and/or dessert. It depends on the hotel and their service standards.

Someone mentioned working at a property that they serve/clear from the right. This may be so, but as a general rule, serve from the left, with the left hand, walking forward (clockwise).
Pick up (clear) and pour from the right, using the right hand, again walking forward (counter clock wise).

CORRECTION ~WHAT WAS I THINKING???

Someone mentioned working at a property that they serve/clear from the right. This may be so, but as a general rule, serve from the left, with the left hand, walking forward (COUNTER clockwise).
Pick up (clear) and pour from the right, using the right hand, again walking forward CLOCKWISE).
(OR the reverse of my original post)
