What are the top 3 traits or skills every chef must have to excel?

1) Lead By example
2) Surround Yourself with as many people who are better than you at what they do, not what you do but what they do.
3) Learn the strength's and weaknesses of individual's. Then learn how to manage those trait's on an individual basis. Do not treat everyone the same, in front of other's yes...but ..? get it?

1) You must be able to humbley accept critisizm

2) The world does not revolve around you, it is a team effort.
The front end staff must believe and be proud of what they are serving.
You must have a close working relationship with the front end.
