Getting into a solid restaurant chain is a great idea. Starting as a dishwasher and learning at every new opportunity you get. You should not stay more than 1 year at the same place then you are limiting your skills. Move around if you are able to and cook in differwent restaurants and learn the food and culture.

Go to work for the best restaurant in town and keep an opened mind. Wash dishes, peel potatoes and clean clean clean. Let the chef know you have a desire to learn from him/her. work harder and longer than others and ask questions.

I wouldn't hurt to read up on basic cooking principals either.
