#1 - Always, always publicly support the actions and decisions of the Executive Chef. In private discuss your thoughts. Even if that person is wrong, to bring public light to it with only bring question to both you leadership abilities #2 - Understand the workings of your P&L and be an expert on labor managment and the ability to track down variances with your A vrs T food costs #3 - Integrity, simply put "walk the talk".
