1. for a true pastry chef. to make pastry must be pleasure and not one job.
pastry chef must give pleasure to the customer whith his pastry.
2.to be creative. pastry chef need to be a little bit funny.
3.never count the time of work

A PASTRY CHEF!must allllways count the time! you must always work fast and efficiently. As well as accurately, you will have no worry about how the pastry looks until you can truly work fastly, efficiently, and accurately. If I had all the time in the world to make just one cake. It would be the best cake ever, but it would only be one cake that I made. If I can find somehow to work fast enough to make the same beautiful cake 100 times in 2 days. Then you can call yourself a pastry chef! A pastry chef must have motivation and creation! If you lack these things, you must search and seek it out for yourself. But, the one thing that you are right about is that, pastry is never a job. It must always be your love and passion. Never forget or lose touch with the passion and the fire you have inside for it.

1. Foundation- you have to have something to build and develop on. All creation starts here.

2. Sanitation- Working clean is a must, it is a test of professionalism and a signal to your Executive chef you mean to excel and provide for the safety of your guest.

3. Organization- speed is great.. but where are you going? There is a lot of repeat motion in pastry and speed comes from doing the correct technique many times. Knowing what needs to be done and what order saves steps and time.

These are the three things I stress more in my kitchen than individual skills or techniques. Without these are may never develop, or development will be much harder than needed.

excuse my english, you must be always efficient, faster, organized, you have to be creative, and love what you do.
You have to think for everyone and you need to know every post.
When I take a new job, I try every post for improved it and know what I will talk about when I will have something to explain
