How do you learn to make baguettes like the French do?

And... can these lovely baguettes be made in Australia? I've never seen them. I'm on the verge of opening a cafe and would like to sell baguettes and French pastries in the morning and pizza during the day (via a wood oven pizza). Night menu hasn't yet been thought about.

I know under 30 year olds can get working holiday visas for Australia from particular countries (Franch, Canada, USA, UK etc) - anyone out there who has the experience who might like to take the opportunity if it all goes through?

Hello, Yes baguettes can be made anywhere, but a few factors have to be considered. Your local flour, its quality, the type of yeast you use for your production, your production schedule as well as the fact that baguettes have a relatively short shelf life.
I do consulting in the US and would be happy to speak to you personally, give advise and possibly teach a simple baguette and bread making skills if needed.
