The best book I could recommend would be "The Practice of System and Network Administration" by Tom Limoncelli and Christine Hogan. It's available from Addison-Wesley and has a lot of good material. A second choice would be "Essential System Administration" by Aileen Frisch, available from O'Reilly.

IMO: go straight for the certs. That way you prove your knowledge right on your resume.

The RHCE is a decent cert. Here is a book for it.
