most customers don't have any clue what goes on behind the scenes, but they do notice cleanliness and personality. other than that, the skill will always show. |

I agree, cleanliness and personality are big. Sushi is something that people will experience and not know if what they had was the best sushi or not, but they will remember the chef, presentation, and timelines. -Jake

tips : every body can make sushi, nigiri, temaki, urumaki hosomaki or whatever, but they should know about the food cost, menu knowledge, and how to manage their job, with a limit time can make more menu |

Pride, you should always take pride in everything you do, whether someone is watching or not. Don't be lazy or sloppy because the food you send out is a piece of you. It is a direct reflection of you. And not only when it comes to your food but also your job as a whole. Take pride in your job! Go in ready to work, mess? clean it up! bored? help someone else! And for the sake of all of us in the industry that love our jobs, don't ever go to work and say "thats not my job" it is in fact, everyones job. The job is to get it done, period. Common sense, most of the "behind the scenes" stuff customers don't see, just takes common sense. Something that most people don't have :) So think, be smart, everything you do behind that bar should be intentional. Move with intent, work with intent. Attention to detail, not all are, but all should be very detail oriented people, this will not only show in your food but trickle down into everything else you do. |

3 most important skills are hard to determine, but in my opinion, in this order, top 3 skills are: 1 - Chefs presentation/hygiene (clean hands, shaved, smiling, friendly, clean clothes, clean kitchen, clean working style)
