Our client, Crispelli's Bakery and Pizzeria ( www.crispellis.com ) has an exceptional opportunity available for a talented Artisan Baker who also enjoys management responsibilities. Crispelli's currently has one dynamic location in Berkley with a second opening in West Bloomfield. The company operates a scratch kitchen that places the highest emphasis on quality. There are no shortcuts taken on production and the value is passed on to their loyal customers by providing affordable, timely gourmet food. Crispelli's is now in the process of opening a new bakery commissary to provide its locations with fresh baked artisan bread.
The artisan bakery manager (hands-on) will control the current, and manage the development of all bread and pastry items within specified guidelines. Crispelli's goal is to establish a world class line of artisan breads utilizing natural starters to enhance their upscale prepared food and signature sandwiches. The company is also seeking to grow their wholesale business through commission based direct sales.
Approximate schedule would be Tuesday-Saturday, 4:30am-2pm, 45-50 hours/week. Terrific salary commensurate with experience and excellent benefits offered.
Responsibilities will include: Maintain all dough formation using established recipes. Will assist with new recipe development of future artisan products. Create operating manual with standards and procedures through precise documentation, including photographs and help in evaluating initial bakery training and guidelines. Hire, develop, and assist in training staff. Maintain relationship with Crispelli's Director of Operation and location General Managers to ensure quality and consistency.
Skills Required: Extensive hands-on training in all areas of baking including European Artisan Breads, Sourdough Breads, Bagels, Rolls, Danish and Pastry from top level retail bakery and culinary schools. Ability to work within a cross functional team Strong planning, organizational and project management skills Exceptional sensory and culinary skills. A passionate food person who demands excellence. Inherently artistic person who had additionally mastered the science side of baking and culinary, and is able to apply their skills toward reverse engineering field tested products when necessary Prefers leadership by example management style. Maintains a high level of professionalism at all times. Proven to have excellent problem solving skills and is highly pragmatic Baking and pastry background is essential; experience as a Chef would be especially advantageous. Baking or Culinary degree is required.
Candidates with ties to the Michigan area are preferred.
