SUMMARY

Assists in the coordination of food service activities of hotel, restaurant, or similar establishment by performing the following duties personally or through subordinate supervisors.

ESSENTIAL DUTIES AND RESPONSIBILITIES

include the following. Other duties may be assigned.

Knowledge of hotel outlets hours of operation, hotel activities, meeting room locations, management names and offices, and in-house functions.

Use of proper phone etiquette and phone procedures.

Able to read daily events sheet/10 day forecast and staff accordingly to occupancy levels.

Able to give station assignments and establish a fair rotation for staff.

Requisitions or purchases supplies.

Confers with food preparation and other personnel to plan menus and related activities such as dining room, bar, and banquet operations.

Inspects food quality to ensure standards and sanitation regulations are in compliance.

Maintains effective presence in restaurant, checking guest satisfaction and resolving food quality and service complaints.

Maintains presence in room ensuring that staff is seating guests properly, replenishing beverages, restaurant cleanliness, and use of proper cashiering procedures.

Up sells large party capability to groups prior to arrival

Utilizes servers and hostesses for maximizing up selling potential

Assists in the generation of effective and profitable in-room promotions.

Assists in marketing food & beverage department to local clientele.

Assists in developing role play scenarios and effectively administer with staff.

Assists in monitoring staff performance, give constructive feedback and develop needs areas.

Able to utilize coaching manual to train and develop staff.

Effectively monitors monthly budget and able to stay within forecasted numbers.

Understands and stays within staffing guidelines.

Able to accurately complete daily labor report and understands staffing guidelines, wage guides, labor costs, and effectively control staff overtime.

Able to accurately and efficiently complete a weekly schedule using forecast and staffing guides.

Understands food and beverage costs, waste control, portions, and able to use efficient controls of each.

Able to perform all management functions, trouble shoot, and program for daily use the point of sale computer system.

Be proficient in the responsibilities of servers, bartenders, host/cashier responsibilities in the point of sale computer system.

Understands and is able to effectively communicate with the Accounting, Human Resources, Front Office, Housekeeping, Sales, and Engineering departments.

Assists the Restaurant Manager in Conducting a monthly documented departmental meeting copying minutes to the Food and Beverage and Human Resource Directors.

Effectively maintain current service levels and develop improved standards to receive positive guests comments and reach departmental and hotel service goals.

Able to complete all responsibilities for servers, bartenders, Hosts/cashier positions.

Assist the Restaurant Manager in anticipating purchase needs for linen, china, glass, silver and able to complete bid recommendations.

Familiar with and able to train in proper lifting, carrying, spill procedures, chemical handling, use of equipment, and any other safety hazards staff would encounter.

Able to complete a maintenance request form.

Able to use hotel paging system to contact Department Manager or Manager on Duty.

SUPERVISORY RESPONSIBILITIES

Assist in the management up to of 20 - 25 employees in the Ship Tavern and Churchill Bar.

Is responsible for the overall direction, coordination, and evaluation of these units.

Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

QUALIFICATIONS

EDUCATION and/or EXPERIENCE

Associate's degree (A. A.) or equivalent from two-year college or technical school; minimum 4 years restaurant experience as a server with 2 years minimum of assistant managing and/or supervisory experience in a high volume upscale restaurant.

This position requires extensive wine knowledge including but not limited to old world wines and new world wines.

Comprehensive food knowledge, preparation and service is essential for this position.

LANGUAGE SKILLS

Ability to read, analyze, and interpret general business periodicals, professional journals, technical procedures, or governmental regulations.

Ability to write reports, business correspondence, and procedure manuals.

Ability to effectively present information and respond to questions from groups of managers, clients, customers, and the general public.

MATHEMATICAL SKILLS

Ability to work with mathematical concepts such as probability and statistical inference, and fundamentals of plane and solid geometry and trigonometry.

Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.

REASONING ABILITY

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
