The Banquet Steward reviews and understands the Banquet Event Order (BEO). He/she pulls the necessary banquet equipment and delivers to assigned room as stated on BEO. The Banquet Steward receives food items from kitchen, ensuring adequate amounts have been provided as stated in BEO. Sets up clearing stations for banquet functions and serves as support individual during guests service. He/she keeps Banquet back hall, linen rack and storage areas neat, clean and organized. The Banquet Steward clears trays, sorts neatly, and places dirty items in appropriate containers and removes to applicable department for cleaning.
Set up and organize work station with designated supplies and equipment; report shortages to supervisor.
Set up designated wares for Banquet functions and transport to function area.
Retrieve designated amounts of bread/rolls, butter, milk, cream, dressings, cold appetizers and desserts and other food items from the kitchen and transport to Banquet service area.
Fill water glasses with ice and water.
Stack plated meals in hot carts and transport to Banquet function area.
Organize the breakdown area for drop off of dirty wares.
Remove soiled wares from the kitchen line and transport to the dishwashing station.
Transport soiled wares from Banquet service area to dishwashing.
Assist in breaking down buffet tabletop items and transport to designated areas.
Return all unused food items from Banquet service areas to designated kitchen section and assist kitchen personnel in the breakdown of such.
Clean coffee machine, sinks, counters and surfaces in the Banquet service area.
Operate the dishwashing machine and wash wares as assigned.
Handle all wares carefully to prevent breakage and loss.
Monitor usage of chemicals to maximize consumption.
Maintain cleanliness and working condition of garbage disposal.
Breakdown and clean dishwashing machine and work areas.
Clean and sanitize pots, pans, utensils and other kitchen equipment.
Maintain cleanliness and organization of work areas throughout shift.
Clean spills in kitchen and work areas immediately.
Maintain cleanliness and organization of supply/storage closets; remove trash, wipe down shelves/counters; clean floors; remove items which do not belong and place in correct areas.
Transport garbage containers from kitchen and work areas to dumpster; empty and clean.
Adhere to recycling regulations.
Clean garbage compactor and area as assigned.
Report any damages, maintenance problems or safety hazards to the supervisor.
Education & Experience:
1. Good understanding of the English language.
2. Provide excellent customer service and maintain a professional demeanor.
3. Compute basic arithmetic.
4. Ability to perform duties with attention to details, speed, accuracy and follow-through. Follow directions. Adapt to meet priority changes of work flow requirements. Operate designated machinery.
1. High school graduate or equivalent vocational training.
2. Previous experience as hotel/restaurant dishwasher or in janitorial/cleaning position.
3. Familiarity with proper sanitation regulations.
4. Knowledge of proper chemical handling.
