The Purchasing Manager is responsible for the procurement of food and food related items that are needed for the daily operation of the cafe. This includes ordering and reviewing quality from contracted vendors, building and maintaining solid working relationships, as well as developing relationships with local purveyors for seasonal fruit and vegetable items. The Purchasing Manager is responsible for budgeting and forecasting, ensuring that margins are maintained. He/She is also responsible for assisting the management team in planning, organizing, scheduling, assigning, reviewing, and supervising the food production, ensuring that costs are contained and that waste is kept to a minimum.

The Purchasing Manager supervises the ordering, inventory, and distribution of food. A high degree of flexibility is needed for the role and the willingness and availability to be contacted and consulted outside of normal working hours.Responsibilities will include, but are not limited to the following: Establishes a culture of respect, hard work, consistency and effective communication in the kitchen.Purchasing according to a cost of goods control system using costing tools and budgets as directed by the Executive Chef.Maintains the highest levels of food safety, sanitation and cleanliness in all production areas. Maintains food production costs and price, portion, and quality assurance and control methods in a large food production operation.Manages the procedures for ordering, receiving, storing, and packaging meals and foods items in large quantities.Manages the use and care of equipment used in large-scale food operations. Manages the health, sanitation, and safety regulations pertaining to the handling and storage of foods and the operation of food processing facilities and equipment.Develops and maintains accurate records, makes mathematical computations, and prepares production reports.Reviews and analyzes work procedures and methods, and devises and implements improvements.Establishes and maintains effective working relationships with vendors and kitchen employees.Maintains monthly waste log and calculate monthly costs at close of month end inventory as directed by the Director of Operations.

Manages company’s “Green” waste, compost and recycling program as directed by the Chef. Responsible for the hands-on production duties as needed/required. Insures returns and credits are accurately processed as directed by the Chef. Monitors cleanliness of all areas in the kitchen environment.Oversees inventory control by supervising the porter/receiver and maintaining daily inventory reports.Performs other duties, as assigned, and follows through on requests in a timely manner.
