The Cook shall establish a monthly menu and implement meals according to United States Department of Agriculture (USDA) guidelines. The Cook will shop, place orders, ensure kitchen is sanitary and in good repair according to Department of Environmental Conservation (DEC) regulations, and coordinate duties with the Cook Assistant. QUALIFICATIONS(Consideration may be given for equivalent knowledge, skills, abilities, education, and experience)High School Diploma or General Education Degree (GED).Minimum of 5 years experience in culinary field. Experience must include preparing meals on a regular basis for 100+ customers.Culinary Certificate strongly preferred.Safe Food Handling Card and Food Protection Manager Certification, or within 60 days of hire.Ability to plan menus according to budget guidelines.Current First Aid CPR Certification, or within 90 days of hire.Ability to lift 50 lbs.Basic computer skills.Good oral and written communication skills.Strong customer service skills.Valid Alaska Drivers License with non-SR22 insurance.Knowledge and experience working with Alaska Native/American Indian people strongly preferred.ESSENTIAL FUNCTIONSPlans and prepares meals and shops for lunches within approved budget.Plan special meals for Elder and Tribal events.Responsible for DEC compliance.Responsible for safe operation of kitchen equipment.Clean sanitize equipment (range hood, oven, grill, fryer, refrigerator, freezer, mixer, microwave, etc.).Ordering, purchasing of food and supplies as needed for the lunch program.Receiving and inventory control for food, supplies and equipment.Maintain high standards in inventory and quality control.Clean, sanitize and maintain kitchen utensils and knives after every use.Consults with KIT Registered Dietitian regarding menu as needed.Treats elders with respect and courtesy at all times.Reports incidents of suspected elder abuse and or neglect according to State law.Maintains confidentiality in accordance with KIT Policy.Other duties as assigned.This Job Description reflects Kenaitze Indian Tribe's best effort to describe the essential functions and qualifications of the job described.
