FROM INMATES: INPUT & COMPREHEND COMPUTER DATA; CONDUCT INMATE COUNTS SECURE & MAINTAIN EQUIPMENT; READ, COMPREHEND & CALCULATE MENUS; OBSERVE SANITARY FOOD HANDLING PRACTICES; INSTRUCT & SUPERVISE INMATES UNDERSTAND FOOD NUTRITIONAL VALUES; INVENTORY & ROTATE STOCK; COMPLETE CPR, FIREARMS & UNARMED SELF-DEFENSE TRAINING; INSTRUCT AND SUPERVISE SUBORDINATE STAFF; COMPLETE & MAINTAIN WORK SCHEDULES FOR SUBORDINATES; REQUISITION FOOD & SUPPLIES WITHIN BUDGET; IDENTIFY SERVICE OPERATIONS; PLAN & DEVELOP PROCEDURES.

Knowledge, Skills and Abilities / Competencies:

GENERAL KNOWLEDGE OF PLANNING & OPERATING A LARGE SCALE FOOD OPERATION. GENERAL KNOWLEDGE OF THE METHODS, MATERIALS AND EQUIPMENT USED IN LARGE SCALE COOKING & FOOD SERVICE ACTIVITIES. GENERAL KNOWLEDGE OF FOOD SANITATION PRINCIPLES & METHODS OF MAINTAINING SUCH STANDARDS IN AN INSTITUTIONAL KITCHEN. GENERAL KNOWLEDGE OF THE METHODS OF MAIN TAINING ORDER AMONG INMATES. SOME KNOWLEDGE OF THE PRINCIPLES & PRACT ICES OF DIETETICS & NUTRITION. ABILITY TO APPLY ESTABLISHED PRISON UNIT
& DEPARTMENTAL REGULATIONS. ABILITY TO KEEP CLERICAL RECORDS & TO
PREPARE ROUTINE REPORTS. ABILITY TO ESTIMATE & REQUISITION NEEDED FOOD ITEMS. ABILITY TO PLAN & SUPERVISE WORKLOAD OF EMPLOYEES & INMATES.

Minimum Education and Experience Requirements:

High school or General Educational Development diploma and two years of supervisory experience in institutional food preparation and food services, preferably one year of which is in a correctional environment; or an equivalent combination of education and experience. Necessary Special Qualifications - Must be eligible for certification by the North Carolina Criminal Justice Training and Standards Council. .
