Great Opportunity for an Executive Chef (posted May 22, 2013) in Tucson, Arizona. Gaming Hospitality Executive has been retained to assist a company identify a candidate with experience in overseeing entire culinary operations that range from casual to fine dining. Job description for the Executive Chef is as follows... Responsible for managing the daily operations of all food venues including food costing, pricing, inventory control, menu concepts, production, staffing and vendor relationships; Responsible for ensuring maximum guest service and satisfaction. Responsible for hiring, training, supervising, scheduling and participating in activities of chefs, cooks and other personnel involved in preparing, cooking and presenting food in accordance with productivity standards, cost controls and forecast needs. Listens actively, and communicates clearly while interacting with guest to promote food products and directing staff activities. Responsible for analyzing feedback from guests and employees, make judgments and take action to implement suggestions for improvement. Enforces performance standards, policies and procedures in accordance with company. Manages recipes by development, creativity; menu planning and design for special events based on current food trends and regional tastes and in accordance with guest budgetary considerations and expectations. (i.e. special orders, buffet presentation, VIP parties, writing specialty menus for promotions, etc.) Responsible for conferring with Director of Food and Beverage regarding new selections and changes. Audits food storeroom items and storage to maintain consistent quality products to ensure adherence to all health code requirements. Enforces safety procedures and cleanliness throughout kitchen(s) including walk-in and reach-in boxes. Works with manual and automated systems and develop or implement procedures, formats, budgets, testing, training and documentation. Assists Food & Beverage Director in estimating annual food budget. Monitors outlets during peak period to oversee production flow and presentation. Responsible for spending time in the dining outlets with the guest to ensure maximum guest satisfaction. Ensures appropriate staffing levels to best manage labor costs while maintaining outstanding guest service. Sustains clear and open communication lines between line staff and Food and Beverage Director. Reviews and approves all recommendations and suggestions to hire, transfer, suspend, promote, discharge, evaluate assign and discipline culinary staff. Performs other duties as requested, such as V.I.P. parties and staff meetings. Provides constructive input to foster process improvement within the department. Executive Chef position Requirements High school or General Equivalency Diploma AND six (6) years experience at the Executive Chef or Executive Sous Chef level in a comparably sized multi-outlet food and beverage operation, including three (3) years supervisory experience OR any combination of academic education, professional training, or work experience approved by Human Resources. Demonstrated track record of success with P&Ls, managing upscale restaurants, buffets, catering, operational functions, and other food services within the hospitality industry. Strong technical literacy, including Microsoft Office Suite software, especially word processing, spreadsheet, and database applications as well as payroll management, purchasing and inventory management, and point of sale systems. Must either possess or obtain a valid Food Handlers card and be ServSafe certified within three (3) months of employment. Preferred Qualifications: Graduate of an accredited culinary school and/or holder of culinary certification, such as Certified Executive Chef. Food and beverage operations experience in the tribal/hotel industry. Bilingual (English/Spanish). We DO NOT open attachments!!!
