The primary purpose of your job is to operate and maintain assigned kitchen in rehabilitation building, proper stocking and rotation of all food service supplies, ensure food safety and sanitation standards are adhered to and follow H.A.C.C.P. guidelines.

Performance Outcomes

I. Meal Service 40%
• Gathers and transports menu items in food trucks to assigned rehab floor. Ensure all record keeping is maintained. Returns trucks to Food Services.
• Assembles and portions beverage/food items for the meal service, such as milk, juice, milk shakes, etc.
• Sets up steam table with menu items in preparation for meal service
• Prepares short order cook items such as grilled cheese, deli sandwiches, etc. from assigned kitchens, as indicated by patient request.
• Serves hot and cold food items according to diet order for 12 patients from the unit kitchen. Ensures the general appearance and food presentation to patients and any other customer of Food and Nutritional Services
• During the meal service, is responsible for ensuring the handling of foods is done in a sanitary and safe manner.
• Returns all beverage/food items to their proper storage area at the end of meal service labeled and dated per documented department/organizational guidelines
• Records and documents food temperatures and cooler/freezer temperatures
• Serve meals to patients seated in unit dining room as applicable
• Pre-set room service trays for delivery by unit staff
• Performs other duties as assigned
II Ware Washing & Sanitation 30%
• Returns soiled hotel pans, oversized pots, etc. to main kitchen pot wash area to be cleaned
• Ensures all cleaning products are stored/rotated in kitchens.
• Cleaning of dishware, glassware, beverage pots, and silverware into floor dish machine
• Places dishware, glassware and silverware items into appropriate storage areas
• Follows standard procedure in preparing the dish machine and soak sinks for the washing period
• Sweeps and mops kitchen floor.
• Records and documents dish machine temperatures per regulatory guidelines
• Cleans kitchen and dining area after each meal service and responsible for the overall sanitation of assigned kitchens
• Must be knowledgeable in handling recyclable and non-recyclable and waste disposal, correct use of cleaning products, and correct handling procedures of dishware, glassware, to reduce excessive breakage
• Performs other duties as assigned
III Maintaining Supplies 25%
• Responsible for the preparation, proper handling and delivering of welcome gift baskets to assigned rehab floors
• Delivers and maintains perishable and non perishable floor stock of two unit kitchens according to determined par
• Ensures all perishable food items are labeled and dated to assure freshness of product per department guidelines
• Responsible for following FIFO method when stocking
• Maintains inventory of meal service needs such as silverware, serving utensils, dishware, etc. of assigned kitchens
• Performs other duties as assigned
IV Food Safety 5%
• Reports to work in clean uniform, clean and proper shoes, hair net and nametag to meet Department Dress Code/Standards
• Meets Quality Assurance standards and attends mandatory In-service-Training
• Follows good safety, infection control and fire safety practices
• Responsible for reporting the malfunction of equipment
• Performs other duties as assigned
• Adheres to established H.A.C.C.P. guidelines
Working Conditions While performing the duties of this job, the employee is occasionally exposed to wet and/or humid conditions and extreme heat. The noise level in the work environment is usually moderate.
Qualifications

Education High school diploma or general education degree (GED); minimum two years of related experience; Prefer Serv Safe certified candidate.

Supervision No direct supervision of staff members. Will act as a guide for staff assigned to kitchen’s operation.

Language Ability to read and comprehend simple instructions, short correspondence, and memos.

Math Skills Ability to add and subtract two digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance

Reasoning Ability Ability to apply common sense understanding to carry out simple one or two step instructions. Ability to deal with standardized situations with only occasional variables. Must be able to handle emergencies, complaints and problems.
