Summary:
The Executive Chef is responsible for the daily operation of the culinary department.

This includes overseeing the culinary operation of the restaurant, room service, and catering.

The Executive Chef is accountable for maintaining profitability and quality control as well as ensuring compliance with Company policies and standard operating procedures.

Experience / Education / Certifications:
·

High School Diploma or Equivalent

·

Culinary degree or certification

·

5 years prior culinary supervisory experience

·

3 years Sous-Chef or higher experience

Essential Duties / Tasks / Responsibilities:
·

Ensure that all preparation for functions and outlets are completed daily

·

Ensure food quality control

·

Ensure that food cost is within budgeted goals

·

Follow labor guidelines and ensure that culinary labor costs are within budgeted guidelines

·

Develop action plans as necessary to correct overages in labor, food or other expenses

·

Develop menus, recipe cards and specs according to Kessler SOP’s

·

Training and development of all culinary staff

·

Performance evaluations of all department personnel in timely manner

·

Follow all HR related policies as related to deadlines and other administrative duties

·

Ensure that all coolers and storage areas are properly maintained and kept clean at

all times

·

Insure that all staff are adhering to proper safety and sanitation guidelines

·

Complete weekly schedules per Peak Performance standards

·

Collaborate with the Director of Food & Beverage to find points of distinction and continue to raise the bar.

·

Supervise subordinates consistent with Kessler Collection core values

·

Coach and Counsel Grand Performers as needed via corrective interview process

·

Interview and hire culinary staff

·

Take ownership, and be a proactive leader who is constantly looking for new and more effective ways of improving products, guest service and profitability

·

Work collaboratively with other department heads and Grand Performers

·

Track food costs and complete inventory per the standard operating procedures

·

Review P&L monthly

·

Attend weekly staff meetings

·

Complete walkthroughs of all culinary areas
