The Country Club of Sapphire Valley is a private, member owned, equity club located in the heart of the Sapphire Valley in Cashiers, North Carolina. It is an idyllic setting among the rolling hills and towering trees of the beautiful Smoky Mountains of Western North Carolina. Members of The Country Club of Sapphire Valley and their invited guests enjoy the beauty of the Sapphire Valley while they take advantage of the many amenities available. The newly renovated valley golf course, the beautiful new clubhouse, state-of-the-art fitness center, tennis center, and swimming pool all combine to provide the best facilities available. Membership to the Country Club of Sapphire Valley is by invitation only. The Club has two outdoor terraces for dining; three Member dining rooms, two informal and one requiring jackets. The Clubhouse also provides special events dining spaces, both indoors and outdoors with a total capacity of 300. The Club operates a snack bar at the turn. One large kitchen serves the clubhouse culinary operations. The Club has 354 members with a distinct adult dining component and a desire to elevate and expand its family orientation. It operates 7 days a week in season, April 1 through October 31, and is closed off-season. The club’s annual Food & Beverage volume is $1.0M, of which 75% is from ala carte dining, including Club sponsored events, and 25% from Banquets and Catering.
The ideal candidate will have a minimum of 5 years of experience as an Executive Chef in private clubs, high-end hotels, resorts or large full service restaurant/banquet operations. Certification and or Culinary Arts Degree is a prerequisite, if not the Club would expect the chosen candidate to aspire and work toward certification, and must have ServSafe and Food Safety certification. An additional requirement is knowledge of nutritional trends, procuring local, fresh, organic products and portion control. The ability to manage in a diverse environment with focus on providing value and incomparable hospitality to our members is essential. This position will work closely with the F & B Director, be directly responsible for a staff of approximately ten employees and report to the General Manager. In addition to exceptional culinary skills, other desired qualities include hands-on coaching and training skills, ability to work closely with front of the house staff and management and the ability to develop rapport with Club members who demand first class quality and service while achieving break-even costs. The Executive Chef must be able to develop special menus and dining promotions for various events ranging from 10 to 400 guests.
