LakeNona is a developer owned club which has a well appointed clubhouse with a fine dining restaurant upstairs and a Grill Room downstairs. We are currently seeking an experienced Food and Beverage Manager to oversee our food and beverage operations. Our busy season runs from October to May during which time we are open for a la carte breakfast, lunch and dinner Tuesday through Sunday and generally hold events on Mondays. The Food and Beverage Manager is anticipated to work approximately 65 hours per week in-season and 45 hours per week out-of-season. Our ideal candidate is a hands-on leader with excellent service training and the ability to earn the respect of our tenured staff and members. We are seeking an individual that can bring new and fresh ideas to our F/B operation while taking into consideration our Club traditions.
Title: Food Beverage Manager
Immediate Supervisor: Clubhouse Manager
FLSA Status: Exempt
General Summary: Assume responsibility for all food and beverage operations for the Clubhouse, including the Grill Room, the Dining Room and banquet services.
Essential Job Functions:
Directly supervise all Food and Beverage staff including pre-meal and menu familiarization meetings, assignment of side work schedule, table and station assignments
Attend to the needs of the members, solicitation of their comments regarding food and beverage service, and taking the appropriate steps to ensure immediate and follow-up action
Efficiently schedule labor for dining room a la carte and banquet functions; monitor and evaluate scheduled and labor hours and costs
Attend management and staff meetings as scheduled
Plan and coordinate training and professional development programs for the food and beverage staff
Help plan and approves external and internal marketing and sales promotion activities for the food and beverage department
Ensure that all servers are well groomed according to policy and in their proper uniform
Assist in planning, logistics and implementing procedures for special Club events/functions
Perform a walk-thru of all member areas at the beginning and end of shifts, observe and report any problems to the proper department head
Accountable for all checks transacted in the dining room to ensure they have been properly entered and closed to the proper accounts. Report to accounting any discrepancies, voids or other concerns involving member accounts when needed
Act as the closing manager including securing the clubhouse according to the security checklist, and report to security that the Clubhouse is secure
Purchase and manage physical inventory of beer, wine and spirits; provide updated information to the accounting department
Work with the Clubhouse Manager, Executive Chef and Catering Director to establish menu prices for a la carte dining and wine lists for food and beverage outlets
Develop a capital budget for all necessary food and beverage equipment
Monitor safety conditions and employee conformance with safety procedures; update emergency plans and procedures and assure that effective training for these programs is conducted
Responsible for the inventory of all china, glass and silverware
Consult daily with the Executive Chef, Catering Director, Clubhouse Manager and other club administrators to assure the highest level of member/guest satisfaction and address anticipated needs
Ensure that all legal requirements are consistently adhered to including wage and hour and federal, state and local laws pertaining to alcoholic beverages; assure that all applicable Club policies and procedures are followed
Maintain records of special events, house counts, food covers and daily business volumes
Audit and approve payroll weekly; send gratuity information to the proper department
Perform all other duties as assigned
Education, experience and skills required:
Minimum of 5 years supervisory experience in a Club, fine dining or similar environment
A thorough understanding of wine and experience in wine sales promotion programs
Creative, energetic, engaging and a highly visible manager to the staff, management, membership and guests
Strong understanding of club industry technology, preferably Jonas software
Hospitality/Business Management education a plus
Must have excellent interpersonal skills with members and staff
Commitment to first class service

This position includes (long periods of) balancing, stooping, crouching, reaching, standing, walking, pushing, pulling, lifting, grasping, feeling and repetitive motions.
Must be able to lift up to 50 pounds
Must be able to work in hot conditions for long periods of time
Must be physically able to do assigned work as outlined above
Must be able to follow written and verbal instructions
Must be able to read, write and communicate effectively in English
