SUMMARY: This position is responsible for the successful operation of the Snack Bar and Retail venues. Responsibilities include, but are not limited to, quality service, staffing, inventory ordering and control, equipment maintenance, quality guest service, compliance with state and federal food service regulations and achievement of profitability goals. Performs all functions in accordance with applicable gaming laws and regulations, as well as Sac & Fox Casino’s established policies, procedures.
DUTIES/RESPONSIBILITIES: The following is a list of the main duties/responsibilities. Other duties may be assigned as deemed necessary by reporting supervisor/manager.
Supervise the overall daily activities of the Snack Bar and Retail operations, ensuring compliance with company and department policies and procedures. Assist in the identification, development, and implementation of process efficiencies.
Ensure company funds and assets are safeguarded and accountability properly maintained
Ensure compliance with all applicable food service regulations. Ensure adequacy of internal controls over cash handling, sales recording, funds accountability, inventory management, and food preparation, storage and handling.
Ensure a high level of customer service by maintaining awareness and monitoring staff performance
Assist in the development of the annual budget. Analyze operation statistics and financial results to budgeted goals. Make recommendations to improve profitability to the Director of Operations.
Establish and maintain effective vendor relationships. Assist in product selection, price negotiations and menu development. Monitor sales results and make recommendations for product changes/ enhancements. Establish inventory PARs and coordinate product orders
Schedule, hire, train and performance manage department staff to ensure competency, build knowledge and ensure procedural understanding and compliance.
Supervises department and has authority over hiring/firing/performance decisions
Strong organizational and communication skills required. Knowledge and ability to operate food preparation and other equipment used in the operation. Proficient in Micro Soft Office (Word, Excel, Outlook) Strong customer service skills. Works cooperatively and fosters teamwork by helping co-workers with essential functions.
High school diploma or GED equivalent (required). The ability to read English and understand either written or verbal instructions. A minimum of 1 year prior experience at supervisory level in food service environment. Working knowledge of applicable food service regulations.
