Private upscale Golf Course Community is seeking the ideal combination of energy, passion, experience and commitment for a Food and Beverage Manager's position. The model candidate should have some club experience but knowledge of all facets of restaurant operations is necessary. Warmth, hospitality and the ability to lead staff within the dining room is mandatory. This position will entail direct operational and administrative workloads, with organizational and prioritizing abilities considered crucial. The ability to conduct business with internal and external customers professionally with prompt response times is of utmost importance. The ability to solicit non-member banquet business while not compromising Resident satisfaction is also considered vital. Responsible for all food and beverage production, service and financial performance for the club. Works with the Executive Chef to develop new techniques for food and beverage presentation working toward maximum member satisfaction at minimal food cost. Supervises the Head Servers and other supervisors of all food and beverage outlets such as snack bars, half-way houses, etc. Recommends employment, trains and supervises subordinates. Implements budgets and applies relevant marketing principles to assure that the wants and needs of club members and guests are consistently met. Performs all duties with a focus on exceptional customer service for both internal and external customers, attention to detail and sensitivity for confidential material.

Description:
Assists with the sales, marketing and membership relations programs to promote the club's services and facilities to member prospects and current members and guests.

Interacts with members and guests and conscientiously tends to their dining needs, ensuring an enjoyable club experience.

Monitors policies relating to personnel, training and professional development programs. Recommends employment, supervises, and trains club personnel. Assures that effective orientation and training for new staff and professional development activities for experienced staff are implemented.

Schedules personnel and plans room set-up for functions. Is responsible for a high standard of appearance in service personnel and the cleanliness of all food preparation and related areas.

Monitors and takes collective action as necessary to assure that the budget’s sales and cost goals are attained.

Creates and develops menu prices, beverage lists and prices and is responsible for the election of condiments, linens, uniforms, and décor used within the property’s facility.

Maintains the quality of purveyors which involve the identification of available purveyors, soliciting bids, selecting purveyors, and monitoring the quality and coast of the items delivered.

Assists in developing an operating budget for food and beverage departments; after approval, monitors and takes collective action as necessary to assure that the budget's sales and cost goals are attained

Approves all booked activities such as banquets and convention where food and beverage services are required.

Inspects to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met

Assures all standard operating procedures for sales and cost control are in place and consistently utilized

Schedules personnel and plans room set-up based upon anticipated guest counts and client needs. Is responsible for a high standard of appearance in service personnel and the cleanliness of all food preparation and related areas.

Works to curb absenteeism and their results

Ensures that all legal requirements are consistently adhered to, including wage and hour and federal, state and/or local laws pertaining to alcoholic beverages

Researches new products and develops an analysis of the cost/profit benefits

Maintains documentation of food and beverage personnel records according to departmental guidelines

Produces daily/meal period sales analyses and other reports as needed from the electronic data machine( s) used in the department

Monitors the ordering and receiving program for products and supplies to ensure proper quantity and price on all purchases

Reviews new techniques for food preparation and presentation in a manner and variety to maximize member and guest satisfaction and to minimize food COS

Consults with the Executive Chef and other department heads on a regular basis to help assure the highest level of guest satisfaction at minimum cost

Greets guests and oversees actual service on a routine, random basis. Takes reservations and checks table reservation schedules. Circulates throughout the club observing preparation and service techniques. Pours coffee and takes orders when necessary

Responsible for inventory and purchasing of all liquor and alcoholic beverages. Develops wine lists and bottle/glass wine sales promotion programs

Assures that all side work is accomplished and all cleaning of equipment and storage areas is completed according to schedule. Directs pre-meal meetings with dining room personnel. Relays information and policy changes and briefs personnel.

Develops on-going training programs for food production, service and bar production/service personnel. Works to ensure proper handling procedures to minimize china glassware breakage and food waste

Personally handles selected member and guest complaints and advises superior about appropriate corrective actions .

Develops interesting ways of promoting club functions

Maintains responsibility for sales, expenses and goals as outlined in the club's operating plans/budgets

Assures that the dining room and other club areas are secure at the end of the business day

Performs other administrative duties as determined by General Manager (Club Manager)

Is accountable to the General Manager (Club Manager) for proper interpretation and fulfi1lment of functions, specific and general responsibilities and related authorities and relationships with other members of the club

Other duties as assigned.

Additional Requirements:
Minimum if 2 years college education, bachelors degree in Hotel/Restaurant Management preferable.

Must be able to speak, read, write and understand the primary language(s) used in the workplace.

3 years supervisory food and beverage experience in an upscale club, restaurant or hotel.

Several years experience in managing/supervising a team of people

Knowledge of PCs, Windows, and Microsoft Office is required; familiarity with the timekeeping systems and IBS or Jonas systems is preferred.

Valid Florida Food Manager Certificate

Must be able to speak, read, write and understand the primary language(s) used in the workplace.
