YMCA Collin County Adventure Camp (CCAC) in Anna, TX is currently taking applications for an experienced leader to manage all aspects of food service at camp as the Food Service Director. CCAC boasts a great food program that is kid-friendly and healthy. Responsibilities for this position include the following:
Hire, train, evaluate and supervise all food service staff. This person is responsible for coaching and managing a staff of approximately 15 personnel. They will develop and post staff schedules, monitor and approve timesheets and ensure that kitchen is appropriately staffed for size of group. In addition, they will give support and direction to volunteer workers as appropriate. (May have to cook if a staff member must take unplanned time off or if someone doesn't show for their shift.)
Plans nutritious and appealing meals appropriate for group being served. Determines inventory on hand, orders food, checks food order upon arrival, ensures food is put up in a timely manner. Monitors meal preferences and tracks guest satisfaction for each item served and adjusts future meal plans
Works with program directors to make menu adjustments available to guests with special food requirements (i.e. allergies, intolerance or religious requirements)
Keep adequate records including daily time sheets, post menus, inventory, food waste (what's left at end of meal), evaluations, invoices, etc.
Is accountable for managing the food service budget including annual budget development, monthly financial oversight, developing food cost per meal as well as general overhead cost per meal and make adjustments based on current financial conditions
Maintain cost effectiveness by researching potential vendors, ordering efficiently, working with sales people to secure best prices & seasonal bargains as well as researching new meal products at food shows
Ensures all regulations and standards pertaining to food services are in compliance with guidelines established by the Health Department, USDA regulatory practices, ACA standards and YMCA promises.
Ensure safety in kitchen through daily inspections, regular staff meetings, periodic staff training and thorough monitoring of procedures and equipment.
Collin County Adventure Camp's mission is about relationships and this position is critical to smooth operations of our programs. Incumbent must maintain a good supportive relationship with food service staff as well as with other facility program and support staff. Good relationships with guests and groups eating in the dining hall will result in better meals and food service evaluations. Good relationships with vendors will result in best products at best prices. Requirements for this position include the following:
Three or more years of experience in managing a food service operation and/or a degree in restaurant management.
Knowledge and experience in food preparation, cooking, baking, food presentation, and kitchen procedures
Knowledge and skills in purchasing, menu planning, general kitchen equipment maintenance
Knowledge of nutritional requirements, health standards, kitchen operations and record keeping
Training and/or experience in personnel management
Knowledge and/or demonstrated skills in developing and managing a food service budget
Incumbent is required to secure a current health card and maintain current training in Food Service Training
Incumbent is required to secure and maintain current CPR and First Aid certifications as well as other YMCA required training
Candidate must have computer skills and is able to do basic skills in Microsoft Excel, Word, Outlook and Access.
Incumbent will be required to enforce safety regulations and respond to any emergency situations according to YMCA procedures and policies
Salary Range : $32,658.15 to $40,822.69 if annualized ($1,256.08 - $1,570.10 per pay period)
