Centerplate is the food and beverage services and merchandise concessions provider for Peoria Civic Center, and we seek a talented General Manager to lead and support our operations.
The General Manager is charged with general oversight and leadership of all food and beverage operations, and in some cases, merchandising operations. He or she serves as the linchpin for communications, support and resource allocation to optimize unit profitability and meet the day-to-day operating budget.
The General Manager will provide hands-on leadership to facilitate dining experiences that exceed guest expectations, while revenue is maximized and expenses are effectively controlled. The General Managers highest priorities will be to ensure that Centerplates standards for quality, service, timeliness, safety, security, sanitation and regulatory compliance are adhered to.
The General Manager will plan and prepare for events and activities according to anticipated guest attendance and client expectations, will provide hands-on management and oversight, and will direct and support post-event activities, reconciliation and reporting.
The General Manager will establish daily priorities and will direct the on-going activities of department heads in key functional areas such as administration, culinary production, hospitality, warehousing, sales, accounting and cash management to ensure that operations run smoothly, efficiently and in accordance with client/partner specifications.

Oversee the selection, purchase, storage, costing, pricing, presentation and service of menu items.
Ensure product consistency and quality across all unit outlets and throughout all stages and touch points, from receiving to point of sale and consumption.
Implement sales techniques to generate new business and to grow and expand existing business, clients and accounts; Review and analyze market trends to ensure competitiveness.
Continually monitor all aspects and areas of operation to ensure optimal quality and service.
Assess opportunities and create action plans to improve service, sales, quality and profitability.
Liaise with and solicit on-going counsel and advice from (Regional) VP; Seek out client, guest and employee feedback and respond accordingly to improve product and services.
Establish units priorities and areas of focus and delegate responsibilities to key staff members accordingly; follow up to ensure employee accountability.
Exemplify Centerplates culture, values and philosophies and ensure that employees understand Centerplates strategy as it relates to their respective functions.
Engage department heads through interactive rapport; Facilitate team effectiveness and create a positive and motivational environment for all levels of employees.
Communicate and disseminate critical event information to department heads and staff members through weekly/daily meetings.
Guide, support and counsel staff; Execute responsibilities for scheduling, performance coaching, discipline, assessment and initiating pay increases.
Actively participate in the units recruitment, selection and training processes.
Coordinate cross functional/cross departmental collaboration for purposes of maximizing resources, fostering team relations and leveraging best practices.
Establish department and individual goals, benchmarks and timelines for on-going development and success measurement.
Contribute to the goal of making Centerplate #1 in Event Hospitality and the #1 Employer of Choice through personal commitment and leading by example.
Build and maintain positive, sustainable relationships with venue clients and other and external constituencies i.e. labor union, vendors, etc.
Be thoroughly knowledgeable of and ensure adherence to OSHA requirements, local Health Department rules and regulations, Alcoholic Beverage Control Board, Centerplate standards and policies for HR, Accounting and general operations, state, federal and local statutes as they pertain to employment and general conduct of business, client/venue contracts, rules and policies and terms of collective bargaining agreements.
Drive compliance, consistency and quality through maintaining visible presence throughout the unit and through conducting continuous walk-thrus of all operational areas.
Supervise employees ability to follow Centerplate standards and operating procedures; establish checklists as necessary and investigate report and follow up on non-compliance issues and employee incidents.
Expediently resolve adherence-related questions, concerns and issues through consultation with client, union, (Regional) VP and/or Corporate Office.
Actively manage the financial performance of the venue through continuous monitoring and analysis of revenue, expenditures and variances.
Regularly review financial statements and activity reports to ensure units targets are achieved.
Communicate with direct reports to ensure efforts are aligned with unit and organizational financial objectives.
Participate in special projects related to the development and implementation of regional and organizational business strategies.
Perform other tasks, functions and assignments, as necessary.
