To coordinate and assure therapeutic diet and cafeteria meals are produced to maintain nutritional quality and be prepared following HACCP standards and practices. Assist and coordinate special functions activities. Determines types and quantities of food needed to be prepares by reviewing planned menus. Ensure meals are prepared in time for specific meal services. Develops and tests recipes and techniques for food preparation and presentation. Supervises staff for consistent high quality and nutritional content of foods on planned menu. Assists in menu planning, design and pricing. Supervises food receiving, handling, storage and preparation following HACCP standards and practices. Prepares weekly food orders. Cook and /or directly supervises patient and cafeteria meal preparation. Hi gh school diploma or general education degree (GED), Associates Degree from a recognized culinary institute. 2-4 years experience preferred. Must obtain and maintain current City of San Marcos Food Handlers Certificate.
