Summary of Responsibilities:
Reporting to the Director, Food and Beverage, responsibilities and essential job functions include but are not limited to the following:
Consistently offer professional, friendly and engaging service
Lead and manage the In Room Dining team and ensure service standards are followed
Address guest concerns and react quickly and professionally
Train Colleaguessupervisors in the absence of the trainer
Balance operational, administrative and Colleague needs
Conduct regularly scheduled departmental meetings
Maximize revenues by communicating regularly with the Food and Beverage teams to implement agreed upon strategies and practices
Have full knowledge of all In Room Dining menus
Manage the departmental budget
Follow outlet policies, procedures and service standards
Follow all safety and sanitation policies when handling food and beverage
Other duties as assigned
To Manage IRD and Refreshment Center as a business unit and create business strategies to ensure maximum Revenues and Profitability
Responsible for all areas of guest service and core standards including the creation of new ideas to assist with the continued development of the Fairmont Chicago, Millennium Park’s image as a leader in food and service offerings and as a Food & Beverage destination
Manage In-Room Dining, Refreshment Center and Guest amenities service to maintain and exceed brand standards
Ensure all facilities are in appropriate operating conditions, including overall maintenance, daily upkeep and cleanliness
To be aware of all hotel services and promotions in order to assist any guest
Leading and coaching all colleagues and leaders in the department
Overall recruiting, staffing and scheduling ensuring adequate staffing levels to satisfy guest needs
Create and implement colleague-training initiatives
Creating and implementing a preventative cleaning and maintenance program
Adhere to all budget guidelines
Work together with the culinary & stewarding team to ensure that all food service meets or exceeds guest expectations and to promote teamwork as a strong component of the daily service culture
Creation and implementation of guest preference programs
Monitoring and continued development of Food & Beverage controls
Control and analyzes the outlet on; quality of service, guest satisfaction, colleague engagement, operating equipments, grooming standards, JDP results, etc
Conduct under the guidance of the F&B Director on; training, promotional plan, interviewing, employee orientation, job performance and corrective action
Participate in service as necessary in accordance with outlet needs
Review all group resumes and BEO’s in order to ensure the successful completion of all IRD responsibilities as outlined in the resumes or BEO’s
Keep an up-to-date knowledge of the menu, beverage list and wine list as well as ensure that all colleagues do the same
Ensure the proper organization of all service equipment. Ensure proper mis en place and station set up to ensure a smooth operation
Check presence of staff and physical appearance
Supervises and assists in service for VIPs
Check outgoing orders for accurate set ups
Do daily food and beverage requisitions
Oversee equipment breakdown and linen sorting
Handle guest requests and complaints
Maintain good working relationships with all fellow colleagues and leaders in IRD as well as supporting departments
Checking of tray and table set up to ensure departmental standards is always maintained
Covering the floor together with the supervisors and in doing so, ensures the following: Check outgoing orders for accurate set ups, Support order deliveries if necessary, Support order taking process if necessary
Audits standards and takes note of guest feedback in order to make positive changes to the product/service offering of IRD
Conduct shift briefings and daily training sessions for all supervisors and colleagues
Ensure that departmental logbook and pass off is completed, ensuring follow up on any outstanding issues from Pass off. Ensures that all guest feedback is communicated to the F&B office (i.e. guest compliments, GIA forms)
Coordinate amenity orders, preparation and delivery
Other duties as assigned by the Director of Food & Beverage
Computer literate in Microsoft Window applications required
University/College degree in a related discipline an asset
Excellent communication and organizational skills
Strong interpersonal and problem solving abilities
Highly responsible & reliable
Ability to work well under pressure in a fast paced environment
Ability to work cohesively as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
Minimum of 3 years management experience in Food & Beverage in a luxury property
Minimum College diploma or education in Hospitality management required
Must be a highly organized person with strong planning skills
Goal and results oriented
Analytical skills, strength as a developer and a leader of others are essential
Energetic, enthusiastic, self-motivated and a charismatic team player.
