JOB TITLE: All Around Line Cook - Dinner Shift:

SUMMARY: Providing restaurant guests excellent food in accordance with Kimpton’s established food production and quality assurance standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.

FOOD QUALITY:

Prepare all menu items in accordance to recipe cards, while adhering to portion control and plate presentation standards. Inspect all plates before notifying server of order status for quality control purposes. Check temperature and seasonings of food items regularly to ensure that items are being served at their most flavorful for guest satisfaction.

Ensure that all food products are inspected upon receipt of deliveries to ensure the highest and freshest quality ingredients are consistently used.

Ensure that food safety standards are followed for cooling and storage of food items to prevent an environment for exposure to bacteria associated with food-borne illnesses. Follow food rotation program of first in, first out for both perishable and non-perishable food items to reduce food waste and control cost.

Complete assigned tasks in the daily cleaning of the pantry, cooking line, prep kitchen, dish area, walk-in and prep area in accordance with both company and health department standards of sanitation.

Required Skills & Experience:

SUPERVISORY RESPONSIBILITIES:

No direct supervision of other members of the Kitchen is assigned to this position.

QUALIFICATION REQUIREMENTS:

EDUCATION and/or EXPERIENCE:

A minimum of one year hands-on progressive experience in food product, presentation, quality and preparation is required.

LANGUAGE SKILLS:

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports, purchase orders, menus and correspondence. Ability to communicate to groups of customers or employees of the organization.

MATHEMATICAL SKILLS:

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

REASONING ABILITY:

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.

WORK ENVIRONMENT:

While performing the duties of this job, the employee is regularly exposed to heat from the stoves and burners. Daily activities involve the use of knives, slicers, mixers, etc. The kitchen floor may be slippery and wet. Hot liquids in large containers are moved and must be carefully transported.

The noise level in the work environment is usually loud.
