Cuts and trims meat to size for display or as ordered by customer, using handtools and power equipment, such as grinder, cubing machine, and power saw. Cleans and cuts fish and poultry.
Candidate will shape, lace, and tie meat cuts by hand, using boning knife, skewer, and twine to form roasts. Candidate will place meat in containers to be wrapped. May also be responsible for placing meat on trays in display counter.
Individual will maintain clean and safe work environment at all times. Individual will be responsible for proper sanitation/cleaning of all equipment and cases; along with proper handling and storage of products.
Individual may also be responsible for receiving product and loading into refrigerator. Any other duties as assigned by the organization.
v Requires excellent guest service skills, and individual with “can do” attitude.
v Must have a minimum of 2 years full-time cutting experience.
v Responsible for merchandising full primals to maximize profits.
v Must be able to trim, cut and wrap to specification.
v Must know how to set-up and breakdown all equipment contained in the meat department; including: grinder, bone-saw and cuber
v Must be well versed in food safety and cross-contamination procedures
v Must know how to properly clean and sharpen knifes, change saw blades and clean block surfaces.
