This is an inspector II position, with IIC responsibilities at one red meat slaughter/processing establishment and one meat processing establishment. The headquarter establishment slaughter mostly swine, with occasional cattle, sheep and goats. This establishment also further slices, grind, salts and smoke meats. The patrol assignment slices and grinds a variety of red meat products. Establishments on this assignment produce raw ground, raw not ground and not heat treated shelf stable product. Establishments on this assignment begin operation as early as 7:00 AM. Occasional holiday, weekend, and overtime duties may be expected as well as relief duties at other establishments.
Knowledge, Skills and Abilities / Competencies:
Working knowledge of state and federal regulations governing the dressing and processing of the animal carcass. Working knowledge of the location of glands and symptoms of sickness, disease, or injury which render the animal, or any part, unwholesome. Must have normal color vision or correct color vision deficiencies prior to employment. Must be able to stand on feet for extended period of time on elevated platforms in wet, hot and cold environments. Must have a valid NC driver’s license. Applicant may be subject to a criminal background check.
Minimum Education and Experience Requirements:
Graduation from high school and three years experience of meat and poultry inspection work, including successful completion of required meat and poultry inspection programs; or an equivalent combination of education and experience. . . .
Preferred training includes OJT, FSRE, Basic Slaughter, Basic and Complex Processing, PHIS, PBIS, HACCP, OSHA, and FAIM. Exceptions to preferred formal training will be considered on an individual basis depending on current skills and abilities.
