This is an Inspector III position, serving as Inspector-in-Charge at four inspected processing establishments. The establishments on this assignment produce entrees, barbecue and fresh pork sausage. Establishments begin operation as early as 5:30 a.m. and as late as 5:00 p.m. Relief duties at other establishments should be expected. Occasional holiday, weekend, and overtime duties may also occur.

Knowledge, Skills and Abilities / Competencies:

Working knowledge of state and federal regulations governing the dressing and processing of the animal carcass. Working knowledge of the location of glands and symptoms of sickness, disease, or injury which render the animal, or any part, unwholesome. Must have normal color vision or correct color vision deficiencies prior to employment. Must be able to stand on feet for extended periods of time on elevated platforms in wet, hot and cold environments. Must have a valid NC driver’s license. Applicant may be subject to a criminal background check.

Minimum Education and Experience Requirements:

Graduation from high school and four years experience of meat and poultry inspection work; including successful completion of required meat and poultry inspection programs; or an equivalent combination of education and experience.

PREFERENCES: Preferred training includes OJT, FSRE, Basic Slaughter, Basic and Complex Processing, PHIS, PBIS, HACCP, OSHA, and FAIM. Exceptions to preferred formal training will be considered on an individual basis depending on current skills and abilities.
