Maintain and initiate all recordkeeping pertinent to the Quality Dept. to include but not limited to food safety, sanitation, internal and external customers.
Daily monitor of operating procedures consistent with proper food safety practices; e.g. uniforms, gloves, sanitization of equip., prevention of cross contamination, etc.
Daily monitoring and reporting of Good Manufacturing Practices (GMPs) for compliance; e.g. complete Tour of Duty form
Coach CSCs before, during and after all external quality, food safety and sanitation inspections and audits.
Assist with development and monitoring 3Ws resulting from audits and inspections.
Assist Quality Manager in training addressing quality, food safety, and sanitation issues to drive process improvements.
Conduct Menu recipe compliance. Daily verification of compliance with Gold Standard process.
Conduct and report portion control weight compliance to specification.
Conduct monthly inspections of dispatch, non-bonded, equipment, etc.
Daily verify Hazard Analysis and Critical Control Points (HACCP) logs and other documents are accurately completed.
Investigate and collect data of alleged food-borne incidents.
Complete and submit FTQ weekly.
2 years minimum experience with HACCP
High school diploma or GED
Working knowledge of calculator, weight scales and thermometers
Good mathematical/analytical, oral, written and organizational skills
FDA regulation knowledge a plus
Ability to work any shift and weekends
Ability to work in cold environment
Ability to work under general supervision
