Qualified candidates for the Master Cook positon will possess a minimum of five years of experience in the type, style & cuisine of the restaurant for which they are applying. May require the ability to read recipes. Must be able to follow verbal directions. Will be required to possess basic knife skills in compliance with OSHA safety regulations and operate kitchen equipment. Responsible for the preparation of all food & menu items in accordance with designated standards established by the Room Chef, which may include limited garde manger production. Advanced knowledge and proficiency in making sauces, soups, stocks, salad dressings, basic butchery and artful assembly of various platters, such as cheese, fruit and vegetables. Advanced knowledge and proficiency in working various stations on the cooking line, which include, but are not limited to, ovens, broilers, grills, griddles, fryers, saute, expeditor, pantry, garde manger and production. Able to assist Chefs in organizing the cooking line, production & supervision of staff. Also responsible for putting away groceries in accordance with Health Department and Silverton regulations. Must follow all Health Department and Silverton standards for basic food service.
