DESCRIPTION

Responsible for assisting Executive Chef in daily duties of preparing, cooking, and presenting food while maintaining a high standard of quality and nutrition for our residents.

DUTIES

Provides the highest quality of food and service to residents at all times.
  • Prepares and cooks food as ordered, ensuring short preparation time.
  • Reads and verifies food order or receives verbal instructions on food required by resident, prepares and cooks food according to instructions.
  • Follows basic recipes and/or product directions for preparing, seasoning, cooking, tasting, carving and serving all foods.
  • Determines appropriate amount of ingredients to utilize while cooking, minimizing waste.
  • Prepares foods by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat, poultry or fish for culinary use.
  • Tastes products, reads menus, estimates food requirements, checks production, and keeps records in order to accurately plan production requirements and requisition supplies and equipment.
  • Selects recipes per menu cycle, prepare bakery items, receives inventory, moves and lift food items and supplies and prepares meals for customers requiring special diets.
  • Maintains clean and sanitized work stations and equipment and must follow all regulatory rules and procedures.
  • Adheres to all cleaning schedules and general sanitation of kitchen.
  • Utilizes proper food handling techniques.
  • Attends ongoing education on knife skills, lifting techniques, and equipment safety.
  • Check menus for items needing thawing or early preparation.
  • Assist with proper storage of all food items (i.e. labeling, dating, etc.) and assists in daily inspection of all storage areas.
  • Assists in ensuring the safety of staff, residents, and visitors by identifying potential safety hazards to immediate supervisor and following all emergency plans (i.e., evacuation, hurricane, etc.)
  • Honor Resident Bill of Rights.
  • Supports Mease Manor's mission and vision.
  • As a legal and moral responsibility, immediately reports all witnessed or suspected resident abuse, neglect, exploitation or misappropriation of funds to department director.
  • All other duties as assigned.
QUALIFICATIONS

  • Back of House kitchen experience (Prep / Grill Cook) preferred.

  • Strength: frequently moves as (i.e., pushing, carrying, and/or pulling, lifting) up to 30 pounds or more.
  • Walking/running, stooping, kneeling, crouching and/or crawling: frequently traverses throughout the floor.
