The Dietary Manager leads the Dietary Department, ensuring the quality of all food. The Dietary Manager directs the preparation and serving of regular meals and therapeutic diets; orders food and supplies; and maintains area/equipment in sanitary condition. He/She possesses leadership qualities to supervise and secure the cooperation of all dietary personnel. The candidate must have a basic knowledge of dietetic principles, food sanitation, and food service operation. In addition, he/she is able to work productively with other department heads, personnel and dietary consultants.

The ideal Dietary Manager must be a graduate of an approved dietary manager’s course that meets the state and federal care regulations. If not a graduate, the employee must be presently enrolled in a dietary manager course or expected to start within four months of the next approved dietary manager course. One to two years prior experience, with progressive responsibility, in this or a related role is expected.

The following is a representative list of duties and responsibilities associated with this position:
-- Responsible for food purchase, production, and timely service of meals
-- Direct and supervise all dietary functions and personnel
-- Purchase food products from approved vendors
-- Maintain cost records and works to meet budget guidelines
-- Hire, orient, train, evaluate, counsel, discipline, and when appropriate, terminate dietary employees. Documents as per protocol
-- Schedule work hours and assignments also reviews and checks staff work performance. Is responsible to see that each shift is properly staffed
-- Develop job descriptions, cleaning schedules, and other dietary management tools. Inventories incoming food supplies
-- Assure that proper storage is available, and that handling of food and supplies complies with current guidelines
-- Process new diet orders and diet changes when received from nursing service, and keeps diet cards updated
-- Plan and assist in preparation and service of holiday and special meals and functions
-- Meet with residents to do initial nutritional assessment and screening, explain diet, record food preferences, and promote a quality food service
-- Visit all residents at least one time per quarter. Residents at nutritional risk are visited weekly. Documents all visits
-- Participate in department head meetings
-- Coordinate dietary service with nursing service and activities director. Nutritional Notes are to be completed monthly for all residents at nutritional risk
-- Assure that food supplies are available for use by dietary personnel
-- Check trays for accuracy before they are delivered
-- Check diet orders that are received against physicians’ orders at least once a month. Notifies Case Manager of discrepancy
-- Inspect Dietary Department regularly to ensure that it is safe and sanitary
-- Submit written reports to administration as necessary
-- Plan and present in-service education programs for the Dietary Department
-- Investigate on-the-job injuries and corrects the problem and/or retrains the employee as necessary
-- Work with Dietary Consultant to achieve quality food service
-- Maintain current Care Plan for each resident through interdisciplinary Care Plan meetings and updating when necessary
-- Monitor the food intake of all residents. Reports any problems to the Dietary Consultant and/or Director of Nursing
-- Maintain the security of the Dietary Department
-- Responsible for knowing, understanding, and conveying to other dietary staff personnel the Federal and State rules and regulations regarding nursing home dietary requirements and is responsible for their enforcement within the scope of the Dietary Department
