Works directly and supports Executive Chef in all aspects of opening/start--up of a new and exciting upscale kitchen operation. Chief duties are to supervise and monitor all activities of Hotline Cooks and Garde Manger. Acts as primary production chef focusing on Stocks, Broths, Sauces, Meat, Poultry, Seafood and Fresh Seasonal Vegetables.
Insures kitchen readiness for ala carte service and participates and conducts pre-service line-up with Executive Chef. Advises Chef on any production issues and interfaces with G.M and service staff to insure ultimate guest satisfaction. Assist in maintaining a quality-oriented, creative, clean, and progressive hospitality environment
the successful individual must understand the dynamics of a fast-paced, quality ala-carte environment. He/she is a motivator of people with excellent management and written/oral communication skills. Formal culinary education and talent is preferred but not mandatory, however hard work, commitment and dedication is.
