Integrity, Respect, and Passion. The primary purpose of your job position is to plan, organize, develop and direct the nutritional care of the residents in accordance with current federal, state, and local standards, guidelines, and regulations that govern our facility, and as may be
directed by the Executive Director, to ensure that quality nutritional services are being provided on a daily basis and to act as a resource to the Director of Dining Services so that the food services department is maintained in a clean, safe, and sanitary manner. You are entrusted to provide innovative, responsible healthcare with the creation and implementation of new ideas and concepts that continually improve systems and processes to achieve superior results.
As Licensed Dietitian, you are delegated the administrative authority, responsibility, and accountability necessary for carrying out your assigned duties. Responsible for planning, organizing, developing, and directing the nutritional care of the resident, in accordance with current federal, state, and local standards, guidelines, and regulations that govern our facility, and maybe directed by the Executive Director, to ensure that quality nutritional services are being provided on a daily basis, and to act as a resource to the Director of Dining Services so that the food services department is maintained in a clean, safe, and sanitary manner. Duties and Responsibilities of Licensed Dietitian includes:
Assist in developing policies and procedures governing the operations of the Dining Services Department, including nutrition
Interpret the department’s policies and procedures to employees, residents, visitors, government agencies, etc., as necessary.
Make written oral reports/recommendations to the Executive Director or RVPO as necessary/required concerning the operation
of Dining Services Department.
Inspect food storage room, utility/janitorial closets, etc., for upkeep and supply control. Ensure hazardous materials are properly
labeled and stored.
Review and assist in developing a plan of correction for any food service deficiencies noted during state/federal surveys and
provide a written copy of such plan to the Executive Director for his/her approval.
Review and make recommendations for an ongoing quality assurance program for the Food Services Department.
Participate in facility/state federal (inspections) as directed.
Ensure that charted food service progress notes are informative and descriptive of the services provided and of the resident’s
response to the service.
Ensure that menus are maintained and filed in accordance with current industry standards of practice as well as established
policies and procedures.
Act as a liaison between the Dietary department and other departments.
Provide consultation to the Director of Dining Services, Executive Director and/or RVPO on federal, state, and local regulations
pertaining to food service operations.
Complete monthly sanitation and safety check of the food service department and report results to the Executive Director and
Assist in developing diet plans for individual residents.
Review therapeutic and regular diet plans and menus to ensure that they are in compliance with the physician’s orders.
Monitor resident bedtime snack program.
Agree not to disclose assigned user ID code and password for accessing resident/facility information and promptly reporting
suspected or known violations of such disclosure to the Administrator.
Agree not to disclose resident’s protected health information and promptly report suspected or known violations of such
disclosure to the Administrator.
Report any known or suspected unauthorized attempt to access facility’s information system.
May be trained and assigned to perform the Customer Care Liaison duties as needed.
Perform all other duties, as assigned. Committee Functions
Participate in care plan and quality assurance committee meetings as needed, including weight and wound meetings.
Evaluate and assist in implementing recommendations from established committees as they may pertain to food services. Personnel Functions

Report occupational exposures to blood, body fluids, infectious materials, and hazardous chemicals in accordance with the facility’s
policies and procedures governing accidents and incidents.
Report known or suspected incidents of fraud to the Executive Director.
Ensure that departmental computer workstations left unattended are properly logged off or the password protected automatic screen-saver
activates within established facility policy guidelines.

Provide in-service training to facility staff on the nutritional needs of residents or other topics as requested.
Monitor food service personnel to ensure that they are following established safety precautions in the use of equipment and supplies. Equipment and Supply Functions
Recommend to the Executive Director the equipment and supply needs of the department.
Assist the Director of Dining Services in placing orders for the equipment and supplies, as necessary or as may be required.
Make periodic rounds to inspect equipment and to ensure that necessary equipment is available and working properly.
Inspect supply rooms and custodial closets to ensure that needed supplies are on hand to perform assigned cleaning tasks.
Evaluate inventory levels of food and supplies to be sure that an adequate stock of staple/non-staple food, supplies, equipment, etc., is
maintained according to state guidelines.
Assist in the purchase of food, supplies, equipment, etc., as needed. Assessment and Care Plan Functions
Participate or assist in completing, coding, and revising of the Resident Assessment Instrument (MDS) to ensure the resident’s dietary
needs are met.
Using the Resident Assessment Instrument (MDS) and other authorized facility assessments, develop or review a written dietary plan of
care that identifies the dietary problems/needs of the resident and the goals to be accomplished for each dietary problem/need identified.
Review goals for modifications, as necessary.
Assess the resident’s nutritional status, identify problems and risks, and develop interventions to meet needs.
Review assessments completed by the Director of Dining Services or Registered Diet Tech, as needed.
Ensure that dietary care plans are updated as the resident’s condition or interventions change. Develop and maintain a good rapport with all services involved with the care plan to ensure that a team effort is achieved in developing the resident’s plan of care. Resident Rights
Maintain the confidentiality of all resident care information including protected health information. Report unknown or suspected incidents
of unauthorized disclosure of such information.
Knock before entering a resident’s room.
Monitor food service to ensure that all residents’ dietary needs are being met.
Ensure that all food service personnel are knowledgeable of the resident’s rights, including the right of refusal.
Review complaints and grievances made by the resident and make a written/oral report to the Executive Director indicating what action(s)
was/were taken to resolve the complaint or grievance.
Maintain a written record of a resident’s complaints and/or grievances that indicates the action taken to resolve the complaint and the
current status of the complaint. Working Conditions
Works in office areas as well as throughout the facility’s food service areas (i.e., dining rooms, resident rooms, activity rooms, etc.).
Moves intermittently during working hours.
Is subject to frequent interruptions.
Is involved with residents, personnel, visitors, government agencies/personnel, etc., under all conditions and circumstances.
Is subject to hostile and emotionally upset residents, family members, etc.
Communicates with the medical staff, nursing staff, and other department supervisors.
Works beyond normal duty hours, on weekends, and in other positions temporarily, when necessary.
Is subject to call back during emergency conditions (e.g., severe weather, evacuation, post-disaster, etc.).
Attends and participates in continuing educational programs.
Is subject to injury from falls, burns from equipment, odors, etc., throughout the workday, as well as reactions from dust, disinfectants,
tobacco smoke, and other air contaminants.
Is subject to exposure to infectious waste, diseases, conditions, etc., including TB and AIDS and Hepatitis B viruses.
Maintains a liaison with other department directors to adequately plan for food services/activities.
May be subject to the handling of and exposure to hazardous chemicals.
Requirements for Licensed Dietitian includes:
Must possess, as a minimum, a Bachelor’s Degree in Dietetics from an accredited college or university.
Registered by the Commission on
Dietetic Registration of the American Dietetic Associations and/or licensed in Dietetics by the applicable state. Experience
Must have, as a minimum, 3-5 year(s) of dietary experience in long-term care either as a consultant or in a supervisory capacity. Specific Requirements
Must possess a current, unencumbered active license to practice as a dietitian in this state.
Must be able to read, write, speak, and understand the English language and possess good communication skills.
Must possess the ability to make independent decisions when circumstances warrant such action.
Must possess the ability to deal tactfully with personnel, residents, family members, visitors, government agencies/personnel, and the
Must be knowledgeable of dietary practices and procedures as well as the laws, regulations, and guidelines governing dietary functions in
the nursing facility.
Must possess leadership ability and willingness to work harmoniously with and supervise other personnel.
Must have the ability to plan, organize, develop, implement, and interpret the programs, goals, objectives, policies, procedures, etc., of the
Food Services Department.
Must maintain the care and use of supplies, equipment, etc., and maintain the appearance of food service areas; must perform regular
inspections of food service areas for sanitation, order, safety, and proper performance of assigned duties.
Must have patience, tact, a cheerful disposition, and enthusiasm as well as be willing to handle residents based on whatever maturity level
they are currently functioning.
Must possess the ability to seek out new methods and principles and be willing to incorporate them into existing food service practices.
Must be able to read and interpret food service cost reports, financial data, etc.
Must be able to relate information concerning the resident’s condition.
Must not pose a direct threat to the health or safety of other individuals in the workplace. Physical and Sensory Requirements

and/or carry such weight a minimum distance of 50 feet.
Must be able to taste and smell food to determine quality and palatability.
May be necessary to assist in the evacuation of residents during emergency situations.
