DESCRIPTION

The primary responsibilities of the Meat Cutter are to properly receive and manage the bulk product inventory from which s/he accurately portions the highest quality steaks and other center of the plate items according to Cattlemens specifications and accurate daily pars.

APPEARANCE:
All employees are expected to maintain a level of personal appearance and hygiene consistent with Cattlemens image and the comfort of fellow employees. For Back of the House employees not working in view of our guests, any jewelry worn must be safe and not violate health code regulations.

REPORTS TO: Kitchen Supervisor or Manager

DUTIES

  • Prepare our steaks and other finished goods to Cattlemens portion and quality specifications
  • Maintain accurate daily builds for each item you cut, and cut to those builds every day
  • Maintain strict adherence to shelf life limits for all COP items
  • Maintain steak yields within expected norms
  • Maintain rotation order and inventory control in the kitchen, bulk meat walk-in and cut meat walk-in refrigerators
  • Maintain accuracy of production worksheets, wall charts, and other inventory records
  • Calculate daily meat PCs and enter into Meat Yield Program
  • Accept, confirm, label and store incoming meat deliveries according to Cattlemens specifications
  • Notify Cattlemens Main Office of any quality concerns
  • Maintain proper sanitary conditions in your work area
  • Maintain the proper working condition of your equipment
  • Oversee performance of Prep Cook
  • Conduct yourself with concern for personal and public safety at all times
  • Maintain strict security with regard to building, freezer and walk-in access
  • Maintain good communication and teamwork with Prep Cook, Line Cooks, Banquet Coordinator and Supervisors
QUALIFICATIONS

PHYSICAL/MENTAL REQUIREMENTS:
  • Ability to stand at least 2/3 of your shift
  • Ability to walk up to 1/3 of your shift
  • Ability to communicate with co-workers up to 1/3 of your shift
  • Ability to work cooperatively with co-workers and supervisors

  • Ability to lift up to 25 lb. and carry above waist high 50 ft. up to 1/3 of your shift
  • Ability to lift up to 50 lb. and carry waist high 50 ft. occasionally during your shift
  • Ability to lift up to 75 lb. and carry waist high 10 ft. occasionally during your shift
  • Clear vision at 20 inches or less
  • Clear vision at 20 feet or more
  • Normal color vision
  • Normal peripheral vision and depth perception
  • Normal ability to adjust vision focus
WORK ENVIRONMENT:
  • Wet conditions up to 1/3 of shift
  • Working near moving mechanical parts up to 1/3 to 2/3 of shift
  • Working in cold conditions up to 1/3 of shift
  • Working with slight risk of electrical shock
  • Moderate noise
