Licensing Coordinators obtain and maintain our restaurants’ operational licenses and/or related licenses and permits to ensure they are active and in compliance with local and state regulations.

In addition to following Chipotle’s policies and procedures, principal responsibilities include, but are not limited to:

Obtaining and Monitoring Licenses

  • Acquiring new/renewing existing liquor licenses by working with law firms and government agencies
  • Following the status of existing restaurant licenses using a web based system that facilitates license tracking and maintenance
  • Initiating business licensing as required for all new stores and ensuring applicable licenses are obtained and in compliance with city, county, and state regulations
  • Obtaining health permits, alarm, liquor, public assembly, and other business permits to ensure the opening of new restaurants and operation of existing restaurants
  • Working with various internal departments to ensure required parties are involved in various stages of the licensing obtaining and approval process
  • Closely monitoring licensing timelines to ensure timely renewal; initiating and processing all renewal requests and obtaining necessary signatures and/or additional components required for accurate processing
  • Ensuring license costs are paid in a timely manner by working with accounting to ensure check requests have been received and accounts have been paid

  • Consulting with local external legal advisors on compliance related matters and following up on issues that require attention
  • Working on special projects as needed
The ideal candidate will:
  • Assume responsibility for, drive, and manage work that involves a variety of resources
  • Be able to communicate verbally and in writing with professionals in various positions
  • Pay close attention to detail and be able to maintain organization in a hectic work environment
  • Be able to learn new computer applications
  • Have knowledge of and the ability to use a PC as well as Microsoft Office Suite and Adobe Acrobat; and have prior experience using web-based systems

B.A./B.S. in Finance, Business, or related field; or an equivalent in education and experience

  • Have the ability to work in a team environment and share ideas
  • Have one (1) to three (3) years professional experience in a related field; preferably in a corporate licensing function, or in operations-related legal administration
  • Enjoy minimal amounts of travel
