The Lead Line Cook is responsible for providing excellent leadership in promoting and facilitating a professional interactive role in our established culinary department. This position is responsible for cooking, preparing, and garnishing all hot food. S/he will train and motivate banquet associates to exceed goals. The Line Cook will assist in elevating and maintaining the Red Lion Hotel guest services standards.

ESSENTIAL JOB FUNCTIONS:
· Ability to operate the following equipment is required: convection and conventional oven, fryer, broiler, salamander, slice, mixer, food processor, dish washer and all small wares and utensils.
· High school diploma preferred, 2 years of related experience or equivalent combination of education and experience.
· Must have high volume Breakfast Buffet experience.
· To perform this job successfully, the individual must have ability to work unsupervised and follow supervisor(s) directions.
· Must have breakfast experience, and be able to pan flip eggs & omelets and other breakfast.
· Must have lunch experience, and be able cross over/set up.
· Responsible for daily prep, line cooking, daily breakdown of station and clean-up at end of day.
· Must have flexible schedule to meet business demand.
· Ability to develop an effective working relationship with fellow employees and supervisors.
· Ability to read, write and communicate effectively with co-workers and patrons in an English speaking environment.
· Must have excellent knife skills
· Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting, grilling, and par-cooking.

EXPERIENCE & EDUCATION:
· High school education required
· Culinary school degree of equivalent experience required
· Three to five years culinary experience in a high volume quality culinary operation preferred
· Prior supervisory experience preferred

WORKING CONDITIONS:
While primarily an indoor job, must be able to work at outdoor locations on occasion, walking on uneven surfaces; · Must be able to work in either hot or cold conditions
· Must be able to stand on feet and walk throughout the day
· Must be able to frequently lift and carry up to 25 lbs. & occasionally lift, carry, push & pull up to 50 lbs;
· Must be able to perform simple grasping, fine manipulation, reaching and repetitive hand & arm movements constantly; squeezing and overhead reaching occasionally
Must be able to twist and bend frequently, and squat occasionally
