Basic Purpose

To trim and cut beef, pork, veal and lamb meat products into sized portions per customer specifications and industry guidlines.


Custom Meat Cutter with one or more years experience the trimming/cutting of beef, pork, veal and lamb products into sized portions per customer specification and industry guidelines. Position responsibilities to include but no limited to :

Trim and cut sized portions of meat products using either knives or band saws.

Count and stack on trays, portions per customer and company specifications.

Label portions with supplied numbered product labels

Perform other duties as assigned, i.e. cutting room set up.


One or more years experience in a butcher/meat cutter position required

Must be skilled as a specialty meat cutter, experience using knives and a band saw

Basic English reading and writing skills

Able to lift 75 lbs

Must be willing to work overtime as needed

Physical Requirements

Able to work in the following conditions:
Freezer/cooler exposure

Average % of time per week
76-100% Prolonged standing, repetitive use of hands to finger, handle, or feel

Read, observe, see objects in detail, talk, hear, or listen to others

26-50% Repetitive pushing/pulling of equipment or materials, repetitive reaching with hands and arms

1-25% prolonged walking
