A First Cook is assigned to a camp by the Scheduling Staff and is responsible for the preparation of meals and overseeing the Second Cooks and general Helpers in the kitchen. The First Cook works in a friendly and efficient manner with the client to manage special requests and complaints while ensuring the smooth working order of the kitchen and its staff.
Key Responsibilities Include, but are not limited to:
Cleans and prepare food using manual and electric appliances
Prepares, seasons and cooks foods such as meat, fish, gravies, vegetables, desserts, sauces and casseroles
Carves meats
Prepares steam tables
Prepares special diets
Prepare soup from scratch
Responds to client and staff inquiries or complaints and resolves problems while working with the Chef
Supervises kitchen staff in the absence of the Chef
Ensures cleanliness of kitchen and dining area
Help to maintain inventory control and costs
Orders stock and rotates groceries using FIFO
Unpacks and stores supplies in refrigerators, cupboards and other storage areas
Reports all accidents and injuries and fills out a Field Level Risk Assessments (FLRA)
Marks down meal temperatures during meal service, fridge and freezer temperatures and steam table temperature before each meal on Temperature Log
Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program
Works in a safe and responsible manner
Participates as an integral member of a team
Ensures PTI policies and procedures are followed
Participates in safety meetings
All other duties assigned by the supervisor
Qualifications
5+ years cooking experience preferably in a remote camp environment
Supervisory experience
OSHA, First Aid, and Culinary training preferred
Excellent customer service skills
Excellent organizational, time management, and communications skills
