Banquet CaptainThe Florida Institute of Technology is currently searching for a Banquet Captain. This is a full-time position and the schedule will vary.The Banquet Captain actively participates in event planning, preparation, set-up, service, break-down and clean up of catered functions. This position provides front of the house leadership, event supervision and customer service during events including direction of banquet staff.In addition, due to scheduling demands and the nature of the food service industry, stressful situations and long hours including late night and weekend work, may occur. Additionally, incumbent may be required to work at dining operations other than their primary assigned unit.

Responsibilities include but are not limited to: Implementation of assigned Banquet Event Orders and Catering Contracts including creating or following time sheets to insure event success Collecting and delivering required supplies to event site, event set up, review of event specifics with assigned staff Guest and event service, break down and clean up after the event Responsible for inventory, care, handling and storage of all catering hardware, linens and serving supplies as necessary for catering setup and event service Maintaining required catering forms and event records Driving dining departments catering vehicles and university rented vehicles on and off campus to deliver required services and accomplish assigned tasks Coordinating the disposal or safe storage of leftover event food as prescribed by the Manager or Banquet Chef Personally practices and insures established procedures for safe food handling, sanitation, personal hygiene and safety standards are met by assigned staff Insuring proper service of alcoholic beverage (Beer, Wine and Liquor) at catered events, including control and security of beverage inventory and cash, service only to legal age guests and control of over service to guests Education/Skills required: Combination of education and experience equivalent to an Associate of Science Degree in Food/Hotel/Restaurant Management, Culinary Arts Certification or closely related field, and/or extensive experience as a lead banquet server or captain in a large hotel or institution with banquet operations Minimum of three years of related experience including supervisory responsibility Familiar with and able to instruct other staff, students and part/time workers on the operational aspects of banquet and guest/customer service Must be able to use and instruct others in the proper use of banquet décor, chaffing dishes and stands, electric and Sterno fired warming boxes, china, stemware, flatware, catering vehicles and commercial food service kitchen and warewashing equipment. Should be familiar with its maintenance including the ability to monitor the performance of equipment, conveying malfunctions to management Considerable knowledge of the practices, methods and techniques in catering service including room arrangements and décor, wine and alcohol service, banquet table service, customer service and safe public food handling Ability to receive and give direction to a variety is staff with varying skill levels to produce successful catered functions from simple delivery set ups to VIP white glove' events for up to 1,500 guests Understanding of commercial food service equipment, banquet service, event planning, is required with the ability to function as a lead worker in the hands on service of events. Position requires strong adeptness at providing leadership in a harmonious manner. The Banquet Captain demonstrates leadership while working with students, part time/temporary food service workers and assigned full time employees.

Student and part time/temporary employees are generally on-call' staff and may occasionally require training on the job. The assigned full time staff positions are assigned to catering as needed from all campus dining operational units.
