DEPARTMENT: Kitchen REPORTS TO: Director of Research & Development
Position SummaryThe Research & Development Chef is responsible for to research, develop and launch best quality signature product line, is responsible for coordinating internal launch process with cross-functionally dependant departments and ensures follow-through and daily maintenance of mis en place, production training, product development, recipe standardization and launch schedules.
Essential FunctionsDevelopment Phase:
Conduct internal tastings during concept and development phase
Work to ensure feasibility of product line within production constraints
Write precise recipes and routing for all new items being developed
Work with Sourcing Manager to ensure viability of new raw materials
Execute accurate shelf life testing
Work with Nutrition and Labeling to compile accurate nutritional information and ensure parameters are met; coordinate sending of meals to outside lab for analysis where applicable
Continually update recipes and pass on all requests for BOM changes
Provide accurate recipes to guarantee that new SKUs are entered accurately
Prepare food for website photo shoot
Develop specs for production for training and reference
Train the Kitchen to transition development into production
Train/monitor Purchasing and Warehouse teams on new raw materials
Additional Launch Responsibilities:
Provide new product information to Copy Editors and Labeling for web content
Provide samples to Marketing for all PR pitches
Conduct cuttings as needed to QA HMR production
Monitor production to ensure that quality standards are continuously met
Participate in various special events to promote the Fresh Direct brand
Assist other members of the R & D team as needed in their efforts to launch products
Plans and carries out work assignments; resolves most conflicts which arise; coordinates work with others as necessary; interprets policy on own initiative in terms of established objectives. Keeps Teamleader informed of progress, potentially controversial matters, or far-reaching implications
No supervisory responsibility
Minimum Qualifications5-8 years minimum experience restaurant cooking (preferably in Manhattan or related culinary epicenter) plus preferable related experience in recipe testing and/or culinary R&D.
Large production experience mandatory
Knowledge, Skills, and AbilitiesExcellent cooking skills with absolute attention to detail and organization
Precise recipe scaling and mathematical proficiency
Ability and temperament to listen, follow precise instructions and follow-up with cross-departmental communications
Ability to work independently and with flexibility in a challenging and stressful team environment
Good computer skills (MS word, Excel and Publisher)
Willingness to perform any job, big or small, with a positive attitude
A true desire to learn, grow, teach and set the example
