A Chef is assigned to a camp by the scheduling staff as needed and cooks a wide variety of foods, develops meal plans, inventory and grocery orders, provides direction to kitchen staff, and ensures the highest quality of food and baking possible. The Chef works in a friendly and efficient manner with the client to manage special requests and complaints while ensuring the smooth working order of the kitchen and its staff. This position is paid at the south district pay level.

Key Responsibilities:
Cooking and serving tasteful, nutritious, appealing meals as well as ensure special dietary needs are met

Supervise the kitchen staff in the preparation, cooking, and presentation of food to ensure the highest quality of food and baking is served

Plan menus, inventory control, and place grocery orders

Maintains and records all food temperatures during meal service, as well as fridge, freezer and steam table temperatures according to PTI Policy and practice

Manage labor and food costs and modify menus & labor to stay within budget

Check the quality of all food purchased and prepared

Meet daily with Facility Manager to ensure all client needs are being met

Ensure sanitation and food safety standards are followed at all times

Assist with staff development and training

Conduct performance reviews and produce action plans for kitchen staff

Promote good public relations

Ensure all PTI policies and procedures are being followed

Participates in and conduct safety meetings

Participates, accepts and adopts the safety principles described in the PTI Group Inc. safety program

Works in a safe and responsible manner

Participates as an integral member of a team

All other duties assigned by the supervisor

Required Skills

ServSafe Certified, Manager level

Knowledge of local employment legislation

Excellent organizational skills

Excellent communication, interpersonal, and team building skills

Able to effectively and efficiently handle high stress situations

5+ years of food service experience as 1st Cook or Chef, preferably in a remote camp environment

2+ years of supervisory experience

Computer literate, Microsoft Word and Excel preferred
