Examples of Duties
1. Open and close Sam's Subs operation as scheduled following set procedures.
2. Handle all the cash and report back to the accountant
3. Prepare and present main dishes including meats, fish, gravies, vegetables, soups and other foods to catering standards.
4. Supervise and train student staff and assign daily duties.
5. Prepare daily order for supplies.
6. Supervise and assist student staff in set up and breakdown of serving lines.
7. Operate appropriate kitchen machinery and equipment in a safe and sanitary manner.
8. Maintains kitchen and serving areas in a sanitary and safe condition.
9. Maintains high standards in food safety and HACCP regulations
10. Control inventory to insure proper dating, labeling and rotation in preparation process.
11. Assist supervisor and/or purchasing agent in inventory stock for purchase.
12. Assist in the preparation and serving at catered events as needed.
13. Participate in staff meetings.
14. Read food service updates to keep current with the new product and techniques.
15. Perform related duties as assigned by the Heritage Manager.

Education: High school graduate or equivalent.

Experience: Two to four years experience of quantity food preparation on a large scale.

Skills: Knowledge of equipment and methods used in large food preparation and catering. Background in nutrition desirable. Working knowledge of catering. Ability to supervise and instruct other workers. Able to work evenings and weekends as needed.

Mental Demands: Able to follow written and oral instructions. Ability to communicate effectively to public, students, faculty, and staff. Organized and able to meet deadlines.

Physical Demands: Standing for several hours at a time. Repetitive arm, hand, wrist/finger motions. Ability to lift, grasp, pull, and bend. Able to lift up to 50 lbs.

Visual Demands: Reading, judging eye-appeal of menu items.
