Using safe food handling practices and following appropriate recipes or guidelines, the Dietary Assistant prepares sandwiches, salads, desserts, beverages and nourishments for patient meals, cafeteria and special functions.
Functions as either server or cashier in the cafeteria operations. Uses proper serving technique, portion control, handles money and meets the public appropriately when performing these duties.
Serves on patient tray line in assigned position. Maintains proper portion control, serving technique and accuracy as appropriate.
Stocks or provides supplies to non-dietary units following specified procedures.
Maintains neat and accurate records including, but not limited to, telephone message sheets, refrigerator check list, cafeteria menu board, cafeteria cash records, etc.
Keep work area organized and clean, using proper sanitation guidelines. Areas include work counters, sinks, dishwashing area, carts, lowerators, cafeteria counters, steam tables, refrigerators, tray line area, storeroom and walk-in cooler shelves.
Processes soiled dishes and utensils through proper sanitation routine (dishwasher and/or 3 compartment sinks).
Transports tray carts to and from the patient care units.
Processes telephone messages for short order requests, late trays or other special requests. Follows procedure labeling items sent to patients and recording message.
Uses proper telephone etiquette and records appropriate information.
Follows procedure for proper storage of foods and beverages (label and date).
Maintains supplies in cafeteria including, but not limited to, coffee, condiments, dishes, utensils, napkins, sugar, salt and pepper dispensers, salad and dessert items, etc.
Sets up and/or cleans up the cafeteria serving area, display cases and dining area.
Sets up or prepares specified items for the Celebration Meals.
Prepares items for the midnight shift meal.
Must work closely and communicate effectively with other employees through sharing work space, equipment and duties for a smooth and orderly operation.
Maintains a working knowledge of the operation and sanitation of the following food service equipment: conveyor dishmachine, garbage disposal, food processor and attachments, small electric mixer and attachments, blender, microwave oven, coffee urns, conveyor toaster, steamer, pellet machine, dumbwaiter, knives, measurement utensils, scales, electric can opener, cash register, steam tables, knife sharpener, telephone and fire extinguisher.
Sets up and takes down ice cream machine using proper sanitation guidelines.
Maintain patient confidentiality and respect patient rights.
Completes scheduled monthly cleaning.
Adheres to prescribed safety practices and procedures.
Adheres to departmental and hospital (CHN) policies and procedures.
Performs other duties as assigned.
Must be able to read, write and speak English
Preferred: High School Diploma or equivalent and previous food service experience.
