Position Summary

This position is an Academic year position; employee is scheduled to work through the semester and is off for three months during the summer. The flex dates for the following academic year are 05/19/2013 to 08/11/2014. Performs advanced food preparation and production for food service units. This is second in a series of three classifications and is distinguished from the Fry Cook in that incumbents cook food that requires advanced preparation techniques. Incumbents are subject to extreme heat from ovens and grills. Typically reports to Cook, Lead. Duties and Responsibilities

Hot Food Production: *Organizes and prioritizes the days recipes. *Prepares food products as ordered for various units. *Ensures that prepared food is ready at times requested by unit managers. *Utilizes FoodPro for recipes and catering. *Uses the VCM, fryers, broiler, grill and ovens. *Notifies supervisor 2 days in advance of product needs. *Prepares products according to recipes. *Ensures that food items are ready at set times for restaurants and Catering. *Maintains product for restaurants throughout the meal period. *Looks ahead at restaurant and Catering menus to see what recipes could be started. *Puts carved meat in for P.M. shift. *Assists in other areas as needed. *Checks walk-ins for proper product rotation. *Checks for out of date products. *Maintains general cleaning in work area. Sanitation: *Prevents cross contamination of food products. *Weighs, labels and dates all food items; stores in designated areas. *Cleans counter top, plexiglass windows, walls, shelves, drain screens and floor mats. *Sends all utensils to be washed and when returned - checks to see that all utensils are properly stored. *Empties sanitizer and takes out trash. *Any other duties as assigned by Lead or Supervisor Customer Service: *Greets and serves customers in a friendly courteous manner. *Provides suggestions and input to Supervisor. *Actively solves problems wherever possible. *Works harmoniously with co-workers. Student Union and County Policies: *Follows Student Union dress code policies *Punches in and out as scheduled using Kronos clock or sign in/out sheets. *Adheres to all Student Union policies and procedures. *Attends all required training. *Adheres to all Pima County Health Department codes including but not limited to proper use of gloves and sanitizers. *Maintains a clean and safe work environment.

Arizona Board of Regents Minimum Qualifications

Two years of commercial or institutional cooking experience; OR, any combination of experience, training and/or education.

Additional Minimum Qualifications

Physical Requirements: *Frequently reaches, bends, stoops, lifts, shakes, stirs, pours, carries and pushes. *Often withstand large workload under high heat. *Often stands during entire shift. *Ability to lift a minimum of 50 pounds *General knowledge of weights and measures *Ability to communicate effectively in English *Knowledge of food service operations including large quantity food preparation. *Skill in operating various institutional/commercial kitchen equipment. *Skill in following oral and written instruction. *Ability to wash food service utensils and equipment. Environmental Factors: *Often fast paced *Often High-volume *Ability to multi-task is essential
