The 319 bed facility is located on a safe and private 37 acre campus in northeast Shelby County and provides comprehensive behavioral health treatment for adults, seniors, adolescents and children. Job Description :

The Cook participates in the provision of quality meals and nutritional services to patients, staff and guests in accordance with established policies and procedures and in a manner consistent with the philosophy and objectives of Lakeside Behavioral Health System.

Job Requirements:

Prefer high school diploma or equivalent. P refer prior culinary experience in a restaurant, casual or fine dining kitchen, hospital, health care, or hospitality setting. Experience with Buffets, Banquets or EDR kitchens preferred. Serve Safe Certification preferred.

Essential Functions:

1. Prepares meals from standardized recipes in accordance with the menu and ensures proper preparation, portioning, and serving of foods in a safe and sanitary manner.

2. Assumes responsibility for proper food handling and utilization of all foods to prevent contamination, increase quality and reduce cost.

3. Sets up food service line and workstations with the needed condiments and ensures all required condiments and garnishes are served with the appropriate foods.

4. Assists in prep for the following day’s menu.

5. Assists in training new employees. Buddy system for acclamation.

6. Assists in writing down items that are out of stock due to using last of items or items for next day’s prep.

7. Assists in special events and functions.

8. Responds to the community issues or concerns that may occur in the dining room in the absence of the Chef/Manager or Assistant Manager.

9. Keeps stock room, coolers, freezers, walk in’s and all hot boxes clean. Ensures that all foods are properly labeled, dated and stored appropriately.

10. Assists in always using the FILO method (First in First Out) in stock room, cooler, ice cream freezer, walk in cooler and freezer.

11. Maintains kitchen cleanliness and proper food preparation according to state and local health department code requirements and departmental procedures.

12. Keeps food waste to a minimum by utilizing food storage and food recycling techniques and procedures.

13. Prefer knowledge of equipment usage including (not an all-inclusive list): stoves, ovens, steamer, fryer, grill, electric mixer, dish washing machines, microwave, food charts
