The Director of Restaurants is responsible for the daily operations of the Eastern Shores's only AAA Four Diamond Restaurant, Sherwood's Landing, the Purser's Pub, as well as the In-Room Dining.
- Highest standard of food product, kitchen and equipment sanitation, storage and handling procedures.
- Technical culinary food quality and portion control.
- Food product, presentation, service and guest relations standards.
- Comply with all hotel policies as noted in Employee Handbook.
- Follow labor and daily work assignment
- Prepares service station
- Controls supply inventory and generates requisitions
- Thorough menu knowledge
- Post hotel VIP guests and daily event sheets
- Monitor pace and table service detail
- Touch each table during dining
- Participate daily line ups
- Menu description of all items being served in dining room
- Adhere to strict uniform and grooming standards
- Thorough conversational knowledge of Hotel history and statistics
Directly supervises employees in the Sherwood's Landing, the Purser's Pub and In-Room Dining. Carries out supervisory responsibilities in accordance with the organizations policies and applicable laws. Responsibilities include interviewing, hiring and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

EDUCATIONAL AND REQUIRED SKILLS:
Five (5) years technical food/beverage service in luxury world-class hotel experience and/or training or equivalent.
Ability to read and comprehend simple instructions, short correspondence and memos. Ability to write simple correspondence. Ability to clearly and effectively present information in one-on-one and small group situations to guests, clients and other employees of the organization.
Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions and decimals. Ability to compute rate and percent in generating guest charges. Ability to understand Profit and Loss forms, as well as budgets.
Absolute quality-detailed service ethic.
Well-rounded management and operational troubleshooting and problem solving techniques.
Strong interpersonal staff and guest relations.
Team-minded approach to fellow workers.
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram or schedule form.
