It is the primary responsibility of the Specialty Room Chef to oversee all aspects of the kitchen operation to maintain and develop the high quality of food. All duties are to be performed in accordance with departmental and Mandalay Bay Resort policies, practices and procedures.

8 years experience in a high volume restaurant as a room chef, preferably in a hotel/casino environment.

5 years of supervisory experience with management responsibility.

Able to work without direct supervision.

Extensive skill, knowledge and experience in all aspects of the kitchen operation, interpersonal service skills, organization skills to plan time effectively.

Excellent customer service skills.

Ability to lead and mentor a team.

Have interpersonal skills to deal effectively with all business contacts.

Professional appearance and demeanor.

Work varied shifts, including weekends and holidays.

High school diploma or equivalent.

Proficient with Microsoft Excel and related programs.

Able to effectively communicate in English, in both written and oral forms.

Associate’s Degree in F&B and/or course certification from an accredited Culinary Institute.

Previous experience working in a similar resort setting.

Previous experience managing employees using a Collective Bargaining Agreement.
